Pi Day fell during the week we spent on my parent's farm in Northern California. It also happened to be a family friend's birthday, as well as Albert Einstein's birthday! Instead of baking a huge pie to have in conjunction with that awesome cake I posted a few days back, I went with something simple. Originally, it was going to be cherry with a graham cracker crust. I went store made and saw a
5-minute pie recipe on the back of the crust packaging. So here is a Cheater's, or semi-homemade if you will, version of the divinity that is Key Lime Pie.
Semi-Homemade Key Lime Pieingredients:
- 1/4 cup water
- 1 package (4-serving size) lime-flavor gelatin
- 12oz key lime yogurt
- 1 tub (8 oz.) frozen whipped topping, thawed
- 1 Pie Crust (I use graham cracker)
procedure:
- Bring water to a boil. Whisk in gelatin until dissolved
- In large bowl whisk together gelatin mixture and yogurt.
- Fold in whipped topping. Carefully spread in crust.
- Refrigerate at least 4 hours or until set.
See? Simple as can be. Also all of these ingredients can be replaced with sugar/fat free alternatives to make it "healthier". Recipe I followed used sugar free and fat free and the Nutritional Facts said one serving as 160 calories. So if that is something you look for you can try
those substitutions.
